Sharrott Winery is looking for an Executive Chef to run our wine bar kitchen. We've specialized in great local wine for the past two decades. Our tasting room offers an upscale wine bar experience with great food to pair with our wines. This is an exciting opportunity to work with local ingredients, develop seasonal menu items, create food and wine pairings, and be part of a team devoted to an excellent customer experience.
Key Responsibilities
Menu Development
- Design and execute an innovative, wine-inspired all-day menu.
- Design and execute a distinct sunday brunch menu.
- Incorporate seasonal ingredients into rotating specials, collaborating with sommeliers to pair food with our award winning wines.
Operational & Financial Management
- Manage food and labor costs to align with budgetary targets, maintaining high quality and consistency.
- Oversee ordering, inventory, and food preparation processes, implementing systems to optimize efficiency and reduce waste.
- Ensure rigorous adherence to food safety, quality, and presentation standards across all menu items.
Training & Leadership
- Lead, train, and inspire a diverse kitchen team.
- Educate front-of-house staff on every menu item—covering ingredients, preparation, sourcing, and allergens.
- Cultivate a positive, collaborative work environment.
- Review customer feedback regularly, adapting menu offerings and training protocols to meet evolving preferences.
Qualifications
- Proven track record as an Executive Chef or equivalent
- Prior experience designing all-day menus and brunch
- Flexible availability, including evenings, weekends, and holidays
- Strong proficiency in managing food costs, labor budgets, and kitchen operations, with a history of meeting financial goals.
- Exceptional leadership experience, including training and mentoring diverse teams in high-pressure, fast-paced settings.
- Highly organized, with a meticulous eye for detail in recipe development, plating, and kitchen workflows.
- Excellent communicator, capable of articulating culinary concepts, ingredient details, and menu rationales to both staff and guests.
