Job Summary:Meal Production Supervisor

The Meal Production Supervisor at Marion Correctional Institution is responsible for supervising inmates to ensure meal and food items are prepared in accordance with production plans. This role involves training workers, assigning tasks, and coordinating work to enhance operational efficiency.

The Meal Production Supervisor will also ensure the sanitation of the facility and uphold personal safety by adhering to all standards and regulations. The duties and responsibilities of this position may vary based on client requirements and business needs.

Job Responsibilities

Food Production and Safety

• Ensure that food preparation and production align with Aramark's standards.
• Monitor and certify production and temperature logs.
• Supervise inmates during food preparation and tray assembly.
• Deliver meals promptly and efficiently in line with Aramark standards.
• Participate in meal preparation and serving duties.
• Distribute cooking instructions, ensuring correct portions and accommodating dietary restrictions.

Security and Compliance

• Store all food items safely and in an organized manner to maintain a hazard-free environment.
• Follow security protocols and ensure storage areas are consistently locked.
• Ensure that all kitchen utensils, equipment, and keys are returned to secure locations.

Scheduling and Supervision

• Create and manage schedules for chefs, inmates, and food service employees to maintain workflow and sanitation.
• Monitor and evaluate staff, encouraging teamwork, efficiency, and professional growth.

Inventory and Maintenance

• Assist in inventory control and ensure proper receiving and storage of food and related items.
• Monitor inventory levels and process requisition orders as needed.
• Maintain logs for kitchen equipment and implement preventive maintenance procedures.

Food Safety and Compliance

• Follow HACCP guidelines to maintain food safety and reduce contamination risks during storage and handling.
• Keep accurate logs for food safety and temperature records and implement corrective actions as needed.
• Participate in meal organization, preservation, and combination using the 5 P’s approach (Participation, Extraction, Integration, Portion Control, and Follow-up).

Qualifications

Experience

• Must be at least 18 years old.
• At least one year of experience in food preparation or a related field is preferred.
• Supervisory experience is encouraged but not required.
• Experience working with inmates is a plus.

Skills and Knowledge

• Ability to motivate and oversee inmates and staff to meet food production quantity and quality standards.
• Food safety certification is required.
• Ability to work independently with minimal supervision.
• Exercise discretion and tact in a correctional setting.
• Follow basic safety procedures and policies consistently.
• Maintain eligibility and security clearance in correctional facilities.

Physical Requirements

• May include lifting, bending, pushing, pulling, and prolonged walking or standing.
• Wearing uniforms and personal protective equipment may be required.
