Role Purpose
The Operations Manager is responsible for overseeing the day-to-day operations, staffing, service delivery, inventory, equipment readiness, event execution, and operational performance of Fire Sharks Concessions. This role ensures that mobile concessions, vending support, pop-up events, private events, and public service opportunities are planned and executed efficiently, safely, professionally, and profitably.
The Operations Manager works closely with leadership, finance, business development, vendors, and event staff to ensure the concessions business line maintains strong operational standards, delivers excellent customer service, controls costs, supports revenue growth, and represents the Fire Sharks brand in a positive and professional manner.
Knowledge and Experience
- Knowledge of concessions, food service, vending, mobile event operations, hospitality, retail, or customer-facing service environments.
- Experience managing daily operations, event execution, staffing, inventory, supplies, equipment, and service workflows.
- Understanding of food handling, sanitation, cleanliness, safety standards, and customer service expectations.
- Experience coordinating public events, private events, pop-ups, festivals, corporate events, weddings, parties, or mobile service operations preferred.
- Knowledge of inventory control, product usage, ordering, storage, waste reduction, and cost management.
- Experience supervising employees, volunteers, event staff, contractors, or temporary team members preferred.
- Understanding of scheduling, labor planning, task assignment, and operational coverage needs.
- Experience working with vendors, suppliers, event organizers, property managers, customers, and business partners.
- Knowledge of point-of-sale systems, cash handling, payment processing, sales tracking, and daily closeout procedures preferred.
- Understanding of basic financial performance, revenue tracking, cost of goods sold, labor costs, and profitability.
- Experience supporting menu planning, product preparation, service setup, equipment maintenance, and event breakdown preferred.
- Knowledge of mobile equipment, concession machines, vending equipment, food service supplies, or event setup requirements preferred.
- Experience creating operational procedures, checklists, training materials, and service standards.
- Prior experience in concessions, food service management, hospitality operations, retail management, event operations, vending, or small business operations preferred.

Key Accountabilities
- Oversee day-to-day operations for Fire Sharks Concessions.
- Manage operational planning and execution for mobile concessions, pop-up events, private events, public events, vending support, and related service opportunities.
- Coordinate event setup, service operations, customer experience, and post-event breakdown.
- Ensure staff, equipment, inventory, supplies, and service materials are prepared before each event or operational activity.
- Create and maintain event checklists, setup guides, supply lists, operating procedures, and service standards.
- Supervise, schedule, train, and support concessions employees, event staff, contractors, or volunteers as assigned.
- Monitor employee performance, attendance, professionalism, customer service, and compliance with operational expectations.
- Ensure concession machines, mobile equipment, vending equipment, tools, vehicles, and supplies are clean, functional, stocked, and ready for use.
- Track inventory levels, product usage, supply needs, spoilage, waste, and reorder requirements.
- Coordinate with vendors and suppliers to support product availability, equipment needs, and operational continuity.
- Monitor food handling, sanitation, cleanliness, safety, and service standards during all concessions operations.
- Support menu execution, product preparation, pricing implementation, and service presentation.
- Track sales, expenses, cash handling, payment processing, deposits, closeout documentation, and event performance data.
- Partner with finance to monitor cost of goods sold, labor costs, margins, inventory costs, and profitability.
- Partner with business development to evaluate event opportunities, service capacity, staffing needs, equipment requirements, and operational feasibility.
- Communicate event details, operational needs, risks, and updates to leadership and appropriate team members.
- Address customer concerns, event issues, staffing challenges, equipment problems, and service disruptions in a timely and professional manner.
- Identify opportunities to improve operational efficiency, service quality, customer experience, and profitability.
- Support the development of training materials, employee expectations, operating procedures, and quality control standards.
- Ensure Fire Sharks Concessions is represented professionally at all events, customer interactions, and public-facing opportunities.
- Escalate serious customer complaints, safety concerns, equipment failures, employee issues, vendor problems, or reputational risks to leadership.
- Help strengthen Fire Sharks Concessions’ operational consistency, service quality, brand reputation, and long-term business growth.
