Senior Production Chef (Commissary)

We are looking for an experienced Senior Production Cook to join our Commissary Team in Manhattan, helping us maintain the high quality of ingredients we deliver to our restaurants daily.

The Role

As a Senior Production Cook, you will be instrumental in ensuring the efficiency and quality of our commissary operations. You will oversee batch production for our 90+ SKUs, guide a team of 15, and uphold the highest standards of culinary excellence and sanitation.

Key Responsibilities

• Production & Efficiency: Confidently manage a fast-paced, high-volume production environment.
• Execute and scale batch production recipes with precision.
• Team Leadership: Supervise, train, and motivate junior staff.
• Guide a team of 15 with a heavy focus on operational efficiency.
• Quality Control: Maintain rigorous quality standards by inspecting incoming goods for freshness, texture, taste, and visual presentation.
• Safety, Sanitation & Compliance: Ensure the facility meets all health codes.
• Oversee daily cleaning, maintain relevant documentation, and uphold the highest sanitation standards across all workstations.
• Culinary Expertise: Utilize your solid culinary background (Restaurant, Hotel, or Production) to handle complex tasks, including the breaking down and processing of whole fish and fillets.
• Inventory Management: Manage commissary inventory levels using systems such as Restaurant 365 or Margin
• Edge to track usage and stock.
• Operational Support: Assist the Head of Production with assigned tasks.

Qualifications

• Experience: Proven experience in a high-volume production kitchen.

Skills

• Proficiency in batch production and familiarity with inventory management software (e.g., Restaurant 365, Margin
• Edge).
• Technical Proficiency: Basic knowledge of MS Word and Excel.
• Standards: Strong commitment to food safety, hygiene, and organizational cleanliness.
• Leadership: Demonstrated ability to lead and develop kitchen teams.
• Language: Ability to communicate in English and Spanish preferred.
