Musashi Japanese Fusion is looking for an experienced, passionate, and reliable Sushi Chef to join our growing team. We are seeking someone with 3 4+ years of professional sushi experience who takes pride in quality, consistency, and craftsmanship.

Responsibilities

Expertly filet and break down whole fish including salmon, and other seafood.

Prepare sashimi, nigiri, specialty rolls, hand rolls, and traditional Japanese dishes with precision.

Maintain exceptional knife skills and proper fish handling techniques.

Inspect seafood daily to ensure the highest level of freshness and quality.

Prepare sushi ingredients, sauces, rice, and garnishes according to restaurant standards.

Maintain a clean, organized, and sanitary workstation while following all health department regulations.

Monitor inventory and communicate ordering needs to management.

Minimize food waste through proper storage and portion control.

Work efficiently during high-volume lunch and dinner service.

Collaborate with the kitchen team to deliver an outstanding guest experience.

Train and mentor junior sushi chefs or sushi helpers when needed.

Qualifications

3 4+ years of experience as a Sushi Chef in a high-volume Japanese restaurant.

Must be able to filet and fabricate whole fish independently.

Strong knowledge of seafood handling, knife maintenance, and food safety.

Experience preparing premium sushi, sashimi, nigiri, specialty rolls, and omakase-style presentations is a plus.

Ability to work quickly while maintaining exceptional quality and presentation.

Dependable, professional, and team-oriented.

Flexible schedule, including evenings, weekends, and holidays.

Ability to stand for extended periods and lift up to 50 pounds.

Preferred Qualifications

Experience with Japanese cuisine beyond sushi.

Creative menu development and seasonal specials.

Leadership or supervisory experience is a plus.
