Culinary Training Sous Chef

Role Purpose

The Culinary Training Sous Chef supports the delivery of culinary training programs at École Ducasse Abu Dhabi Studio. The role involves assisting chef instructors during practical sessions, mentoring students, and ensuring the highest standards of culinary excellence, safety, and discipline within the training studios.

Key Responsibilities

• Assist Culinary Instructors during practical classes and live demonstrations
• Support students in developing classical and contemporary culinary techniques in line with École Ducasse standards
• Prepare mise en place, ingredients, and equipment for training sessions
• Supervise students during hands-on training, ensuring correct techniques, hygiene, and safety compliance
• Maintain cleanliness, organization, and proper storage of kitchens, pastry labs, and equipment
• Ensure compliance with HACCP, food safety, and HSE standards at all times
• Assist in student assessments, practical evaluations, and feedback sessions
• Support workshops, masterclasses, guest chef sessions, and special culinary events
• Coordinate with stores and operations for ingredient planning, inventory control, and cost awareness
• Ensure proper use, care, and maintenance of kitchen and pastry equipment

Qualifications & Experience

• Culinary Degree or Diploma in Culinary Arts (École Ducasse or equivalent preferred)
• Minimum 2–4 years of experience in a professional kitchen or culinary training environment
• Exposure to hot kitchen operations is an advantage
• Strong knowledge of classical cooking fundamentals
• Knowledge of HACCP, food safety, and hygiene standards
