Duties

• Assist the Executive Chef in daily kitchen operations
• Prepare premium seafood and seasonal ingredients according to traditional Japanese techniques
• Ensure consistency, quality, and presentation of every dish
• Supervise kitchen staff during service
• Train and mentor junior kitchen team members
• Monitor inventory and communicate ordering needs
• Maintain cleanliness and organization of all kitchen stations
• Ensure compliance with food safety and sanitation standards
• Assist with menu development and seasonal offerings
• Support smooth execution of omakase service
• Monitor food waste and portion control
• Perform opening and closing kitchen procedures
• Maintain equipment and report maintenance issues
• Collaborate closely with front-of-house staff to deliver an exceptional guest experience

Skills

• Previous Sous Chef or senior line cook experience
• Japanese cuisine experience preferred
• Sushi or omakase experience is an asset
• Strong knife skills
• Leadership abilities
• Excellent time management
• Knowledge of food safety
• Ability to work under pressure
• High attention to detail
• Passion for Japanese culinary traditions

Pay: $50,000.00-$80,000.00 per year
